Ceremonial Hot Matcha Latte
Whisked matcha powder blooms into a bright green base topped with gently steamed milk, a smooth hot drink you can make at home in minutes.
Matcha rewards a little technique before anything else touches it. Sifting the powder first breaks up clumps, and whisking it in quick zigzag strokes with a small amount of hot water builds the characteristic light foam on top. Steamed milk poured over that foam mellows the bitterness without hiding the grassy flavor underneath.

Tap a number to mark a step doneSift the matcha powder into a small bowl or wide cup to break up any clumps before adding liquid.
Pour the hot water over the matcha and whisk briskly in a zigzag motion for about 30 seconds, until a thin foam forms on top.
Warm the milk in a small saucepan over medium-low heat until steaming, or heat it in the microwave in 30 second bursts.
Froth the warm milk with a handheld frother, or by whisking it vigorously for about 20 seconds until foamy.
Pour the whisked matcha into a mug, then stir in the honey and vanilla extract if using, tasting as you go.
Top the mug with the frothed milk, pouring slowly so the foam sits on top, and serve right away while hot.
Kitchen note
Use water that is just below boiling, around 175F; water that is too hot scorches the matcha and brings out a bitter, grassy edge.
