Caramelized Plantain Slices
Ripe plantain slices caramelized in butter and honey with a splash of lime, arranged simply for a glossy, sweet side or dessert.
Butter and a little honey do most of the work in this simple side, building a deep caramel color without much fuss. A splash of lime juice at the end keeps the glaze from tasting flat and overly sweet. Fan the slices out on a dark plate so the glossy caramelized edges stand out.

Arrange the plantain slices in a single layer and cook for 3 minutes per side until golden and just beginning to caramelize at the edges.
Drizzle the honey and lime juice over the plantains, sprinkle with cinnamon and kosher salt, and continue cooking for 2 minutes, spooning the glaze over the slices, until sticky and deeply caramelized.
Remove the skillet from the heat and let the plantains sit for a minute so the glaze thickens slightly.
Arrange the caramelized slices on a plate, overlapping them slightly, and spoon any remaining glaze from the pan over the top.
