Sausage and Fried Potato Skillet

Sliced sausages and crispy fried potatoes cook together in one skillet with onions and peppers for an easy, hearty one-pan dinner.

Cooking the potatoes first in a hot skillet gives them time to turn golden and crisp before the sausages join in and start releasing fat into the pan. That rendered fat is what gives the potatoes their final flavor boost, so resist the urge to drain it away. One skillet and about half an hour gets a full dinner on the table.

  1. Heat 1 tablespoon of the vegetable oil in a large heavy skillet over medium heat and add the diced potatoes with half the salt.

  2. Cook the potatoes for 15 minutes, stirring occasionally, until golden brown and tender, then move them to a plate.

  3. Add the remaining oil to the skillet along with the sliced sausages and cook for 5 minutes until browned on both sides.

  4. Stir in the sliced onion and bell pepper and cook for 5 minutes until softened and lightly charred at the edges.

  5. Return the potatoes to the skillet along with the remaining salt, black pepper, and smoked paprika, tossing everything together well.

  6. Cook everything together for 3 to 4 more minutes, tossing occasionally, until heated through and evenly combined in the pan.

  7. Scatter the chopped parsley over the skillet and serve it straight from the pan while everything is still hot.

Kitchen note

Cut the potatoes into small, even pieces so they cook through at the same rate as they crisp up in the skillet.
