Golden Yolk Spaghetti Carbonara
A silky Roman classic built from crisped guanciale, cracked black pepper, and a whole egg yolk perched on top that spills into the noodles at the table.
Carbonara turns on timing more than ingredients: the pasta has to be hot enough to melt the eggs into a sauce, but not so hot that they scramble. This version keeps things classic, guanciale rendered until the edges crackle, pecorino whisked into the yolks off the heat. Set the extra yolk right on top and let each diner break it at the table for extra richness.

Tap a number to mark a step doneBring a large pot of well-salted water to a boil and cook the spaghetti until just shy of al dente, about 1 minute less than the package directs, reserving a full cup of the starchy water before draining.
While the pasta cooks, add the guanciale to a cold, wide skillet and set it over medium heat, letting the fat render slowly until the pieces turn deep golden and crisp, about 8 minutes.
Whisk the egg yolks, whole egg, and pecorino romano together in a bowl with a generous amount of black pepper until the mixture looks like a thick, pale paste.
Pull the skillet off the heat and add the drained spaghetti directly to the guanciale, tossing well so every strand picks up the rendered fat.
Wait about a minute for the pan to cool slightly, then pour in the egg mixture, tossing constantly and adding splashes of the reserved pasta water until the sauce turns glossy and coats the noodles.
Plate the pasta right away, top each portion with an extra raw egg yolk, and finish with more pecorino and a heavy crack of black pepper before serving.
Kitchen note
Keep a kettle of hot pasta water nearby since the sauce can seize if it cools too fast; a splash whisked in quickly brings it right back to silky.
