  1. Melt the butter in a large pot over medium heat, add the onion, and cook for 5 minutes until softened, then stir in the garlic for 1 minute.

  2. Add the pumpkin puree, vegetable broth, cinnamon, ginger, and kosher salt, stirring to combine, and bring the mixture to a simmer.

  3. Cook uncovered for 15 minutes, stirring occasionally, so the flavors have time to develop and the soup thickens slightly.

  4. Stir in the heavy cream and simmer for 5 more minutes, then taste and adjust the salt and spices as needed.
