Citrus Grilled Chicken with Mango Salsa
Citrus-marinated grilled chicken sliced thick and topped with a sweet-tart mango salsa, finished with plenty of lime for a light, warm-weather dinner.
Citrus does the heavy lifting in this marinade, keeping the chicken breasts juicy on the grill without masking the char. While the chicken rests, a quick mango and jalapeno salsa comes together with barely any cooking, balancing sweet fruit against a little heat. Fan the sliced chicken out and spoon the salsa right over the top so every piece gets some.

Tap a number to mark a step doneWhisk together the lime juice, orange juice, garlic, olive oil, and kosher salt in a shallow dish, add the chicken breasts, and marinate in the fridge for 30 minutes.
Meanwhile, toss together the mango, red onion, jalapeno, and cilantro in a bowl with a squeeze of lime to make the salsa; set aside.
Heat a grill or grill pan to medium-high and cook the chicken for 6 to 7 minutes per side until nicely charred and the internal temperature reaches 165F.
Transfer the chicken to a cutting board and let it rest for 5 minutes so the juices settle.
Slice the chicken against the grain into thick strips.
Fan the sliced chicken on a platter, spoon the mango salsa generously over the top, and serve with extra lime wedges.
