Cherry Chia Granola Jar

4.4 from 26 cooks

A layered jar of chia pudding and crunchy granola topped with sweet dark cherries, a make-ahead breakfast with a pop of color.

Chia seeds swell overnight into a thick, pudding-like texture that needs almost no active effort beyond stirring the jar before bed. Layering in granola partway through keeps a bit of crunch in the middle instead of everything turning uniformly soft. Fresh or pitted frozen cherries on top add a burst of tartness against the mild pudding.

Method

  1. Whisk the chia seeds, milk, honey, and vanilla extract together in a bowl or jar until well combined.

  2. Let the mixture sit for 5 minutes, then whisk again to break up any clumps that have formed.

  3. Cover and refrigerate for at least 4 hours, or overnight, until the mixture thickens into a soft pudding.

  4. Spoon half of the thickened chia pudding into the bottom of two jars, dividing it evenly between them.

  5. Add a layer of granola over the pudding in each jar, spreading it out into an even layer.

  6. Spoon the remaining chia pudding over the granola layer in each jar until the granola is fully covered.

  7. Top each jar with the halved cherries just before serving so the fruit stays bright and fresh looking.

Kitchen note

Whisk the chia mixture again after the first 5 minutes of sitting; this breaks up clumps and keeps the finished pudding smooth rather than gritty.
