Brie and Salami Platter with Pickles
A wheel of brie, folded salami and tangy pickles come together on one platter with crackers for an easy make-ahead appetizer.
Pairing salty salami and sharp pickles against a wheel of soft brie gives this platter contrast without needing any cooking. Baking the brie briefly softens the center just enough to spread, which makes the whole platter feel more special than a plain cheese plate. Set it out with plenty of crackers so guests can build their own bites.

Tap a number to mark a step doneHeat the oven to 350F and place the whole brie wheel in a small oven-safe dish or cast iron pan.
Bake the brie for 8 to 10 minutes, until the center feels soft when pressed gently with a spoon.
While the brie bakes, fold the salami slices into quarters and arrange them in a loose pile on one side of a platter.
Scatter the sliced pickles into a small pile next to the salami, leaving the center of the platter open for the brie.
Carefully transfer the warm brie to the center of the platter once it comes out of the oven, using a wide spatula.
Drizzle the honey over the top of the warm brie and tuck the thyme sprig alongside it for garnish.
Arrange the crackers around the edge of the platter and serve with the whole grain mustard on the side.
Kitchen note
Let the brie sit at room temperature for 30 minutes before baking so the center warms through evenly instead of staying cool in the middle.
